The Romans were passionate lavender enthusiasts — they used it to scent their baths, their linens, and their hair, and the very name lavender derives from the Latin lavare, meaning “to wash.” Roman legions carried lavender across Europe, establishing it in the gardens of Britain, France, and beyond, where it has been a cottage garden staple ever since.

France — and particularly the Plateau de Valensole in Provence — is the world’s most celebrated lavender-growing region, producing the finest Lavandula angustifolia on Earth. The sight of Provence’s lavender fields in full bloom in July — rolling purple rows stretching to the horizon under a blazing Mediterranean sun — is one of the iconic images of European agriculture. Lavender buds contain a rich array of aromatic compounds including linalool and linalyl acetate (the two primary components of lavender essential oil, responsible for its characteristic sweet, floral scent), camphor, 1,8-cineole, beta-ocimene, terpinen-4-ol, lavandulyl acetate, flavonoids (luteolin, apigenin), rosmarinic acid, ursolic acid, tannins, and coumarins. Superior grade buds are harvested at peak bloom for maximum fragrance and color.

How to Use

Culinary: Lavender buds are a versatile culinary herb — use sparingly in baked goods, shortbread, scones, honey, lemonade, cocktails, and herbal sugars. A classic ingredient in Herbes de Provence. Herbal Tea: Steep 1 teaspoon of dried buds in 8 oz of hot water for 5–7 minutes; strain and sweeten with honey. The flavor is floral, sweet, and gently herbaceous. Sachets & Potpourri: Fill small muslin or linen sachets with dried lavender buds to scent drawers, closets, and linen chests — a centuries-old tradition for keeping linens fresh and fragrant. Bath: Tie a generous handful of buds in a muslin bag and hang under the bath faucet as the tub fills for a fragrant botanical bath. Crafts: Use in wreaths, floral arrangements, candle making, soap making, and pressed flower art. Aromatherapy: Place a sachet near your pillow or in your bedroom for a gentle, lasting floral fragrance.

🧐 Lavender Jelly Recipe

Bring 3 cups of distilled water to a boil. Infuse with 4 tablespoons of lavender buds and steep for 20 minutes, then strain. Combine 2 cups of lavender infusion with ¼ cup of fresh lemon juice and 4 cups of sugar. Bring to a full rolling boil, stirring constantly. Add 1 packet (3 oz) of liquid pectin, boil for 1 minute, and remove from heat. Fill sterile jars and seal. Makes a beautiful gift alongside rose petal jelly and lemon balm jelly!

Beautiful as always!

GF is my go to place for quality herbs and spices. The lavender was lovely and will make the best sachets for our class.
Some of my favorites from this shop include 5% oil cinnamon from Vietnam, her signature in house spice blends i.e. steak seasoning, and Kentucky Bluegrass Spice Rub. Her medicinal herbs (which is extensive) are perfect for making tinctures and salves and teas. Buying in bulk is such a benefit and is very cost effective. Oh….her Oh Berries tea was featured in Southern Living and will not disappoint as well as her Tulsi ginger orange!!!
