Kentucky Bluegrass Spice Rub
A Glenbrook Farms Original — Hand Blended in Small Batches
Some of the best recipes don’t come from cookbooks — they come from neighbors. Our Kentucky Bluegrass Spice Rub was born from exactly that kind of backyard tradition: a recipe passed along by a neighbor legendary in our community for his extraordinary barbecues. We’ve been hand-blending it in small batches ever since, and it has become one of our most beloved products. This is Appalachian Kentucky barbecue culture in a jar — bold, flavorful, and deeply satisfying without being punishing.
The blend combines brown sugar (for caramelization and a touch of sweetness), salt (the essential flavor amplifier), red pepper (for a warm, building heat that’s flavorful rather than fiery), and our proprietary blend of spices that rounds everything out with savory depth and complexity. The result is a rub with a delicate, approachable heat that the whole family can enjoy — kids included — and a flavor profile that works beautifully across an extraordinary range of proteins. We’ve tested it on everything, and the verdict is unanimous: ⭐⭐⭐⭐⭐ across the board.
What’s in the Blend
- Brown Sugar — caramelization, sweetness, and beautiful bark formation
- Salt — essential flavor foundation
- Red Pepper — warm, building heat — flavorful, not burning
- Proprietary Spice Blend — savory depth and complexity
How to Use
Pork (Our Favorite): Coat a pork butt or shoulder generously with the rub, let it rest overnight in the refrigerator, then slow cook in a crockpot or smoker until fall-apart tender. Makes extraordinary pulled pork. Ribs: Apply liberally to baby back or spare ribs and let sit for at least 2 hours before smoking or grilling. Salmon: Pat dry, coat with the rub, and pan-sear or grill over medium-high heat — the brown sugar creates a gorgeous caramelized crust. Chicken: Rub under and over the skin before roasting, grilling, or smoking. Beef: Excellent on brisket, steaks, and burgers — apply 30 minutes before cooking for best results. Vegetables: Toss with olive oil and the rub before roasting — especially good on sweet potatoes, corn, and cauliflower.
