Spirulina — Arthrospira platensis and Arthrospira maxima — is a microscopic, filamentous cyanobacterium (blue-green alga) that is one of the oldest living organisms on earth, with fossil evidence dating back over 3.5 billion years, making it among the first photosynthetic life forms to appear on our planet. Despite its ancient origins, spirulina has attracted extraordinary modern attention as one of the most nutritionally dense whole foods known — gram for gram, it is one of the most concentrated sources of protein, vitamins, minerals, and phytonutrients available from any natural source. Spirulina has been consumed as a food by humans for centuries: the Aztecs of Mexico harvested it from Lake Texcoco and dried it into cakes called tecuitlatl, which were eaten as a staple food and traded in the markets of Tenochtitlan; the Kanembu people of Chad have harvested spirulina from Lake Chad for generations, drying it into cakes called dihé that remain a dietary staple to this day. Spirulina is one of the most nutritionally complete foods known, containing protein (approximately 55–70% by dry weight — one of the highest protein contents of any whole food, with a complete amino acid profile including all essential amino acids), phycocyanin (C-phycocyanin — the primary blue pigment and the most characteristic compound of spirulina, a biliprotein with potent antioxidant properties), chlorophyll a (the primary green pigment), beta-carotene (provitamin A — exceptionally high), zeaxanthin, cryptoxanthin, echinenone (carotenoids), gamma-linolenic acid (GLA — an omega-6 fatty acid; spirulina is one of the few non-animal sources), alpha-linolenic acid (ALA — omega-3), linoleic acid, vitamin B12 (as pseudovitamin B12 — note: the form in spirulina is not bioavailable as true vitamin B12 for humans), thiamine (B1), riboflavin (B2), niacin (B3), pantothenic acid (B5), pyridoxine (B6), folate, vitamin E (tocopherols), vitamin K, iron (exceptionally high — one of the richest plant sources), calcium, magnesium, potassium, zinc, copper, manganese, selenium, phosphorus, iodine, polysaccharides (including calcium spirulan), and superoxide dismutase (SOD — an antioxidant enzyme).
