Hericium erinaceus, a member of the tooth fungus group native to North America, Europe, and Asia, has been prized in East Asian culinary and herbal traditions for centuries. In China it is known as hóu tóu gū (猴頭菇) — “monkey head mushroom” — and in Japan as yamabushitake (山伏茨) — “mountain priest mushroom,” named for the shaggy robes of the yamabushi Buddhist monks of the Shugendo tradition. It has been cultivated in China for over 1,000 years and was historically served at imperial banquets as a prized delicacy.
