Horseradish is one of the most pungent and characterful roots in the culinary world — a hardy, deep-rooted perennial of the mustard family (Brassicaceae) native to southeastern Europe and western Asia, cultivated for its thick, knobby white root for thousands of years. Armoracia rusticana has been a fixture of European kitchens and folk traditions since antiquity, appearing in ancient Greek and Roman texts and referenced in Jewish Passover tradition as one of the five bitter herbs of the Seder plate. By the 16th century, horseradish had become a staple condiment across Germany, Eastern Europe, and Britain — where it was the classic accompaniment to roast beef long before bottled sauces existed.
The extraordinary heat and pungency of horseradish comes from allyl isothiocyanate — the same volatile compound responsible for the bite of wasabi and mustard — which is released when the root cells are damaged (grated, cut, or powdered) and the enzyme myrosinase acts on the glucosinolate sinigrin. This is why freshly grated horseradish is so much more intense than prepared horseradish: the reaction is ongoing. In powder form, the heat is concentrated and shelf-stable, making it an exceptionally versatile pantry ingredient. The root also contains vitamin C, glucosinolates, peroxidase enzymes, asparagine, and resin. Contains sulfites.
