Galangal is a striking aromatic rhizome from the ginger family (Zingiberaceae) that has been a cornerstone of Southeast Asian cuisine and a prized spice of medieval Europe for over a thousand years. Alpinia galanga — Greater Galangal — is native to Indonesia and southern China, and its bold, complex flavor profile sets it distinctly apart from its cousin ginger: sharper, more peppery, with piney, citrusy, and almost medicinal resinous notes that are immediately recognizable in Thai, Indonesian, and Malaysian cooking.

In medieval Europe, galangal was one of the most expensive and sought-after spices of the era — imported along the Silk Road and Arab trade routes, it appears frequently in medieval cookery manuscripts and was a particular favorite of the 12th-century abbess and herbalist Hildegard of Bingen, who wrote of it extensively. How to Use

Thai & Southeast Asian Cooking: An essential ingredient in Thai tom kha gai (coconut galangal soup), Indonesian rendang, and Malaysian curry pastes. Simmer sliced galangal in broths and curries — the pieces are typically removed before serving as the texture is quite fibrous. Spice Blends: Grind dried galangal into powder for use in spice rubs, curry powders, and ras el hanout blends.
