Trigonella foenum-graecum — whose Latin name translates roughly as “Greek hay” — is a small annual legume native to the Mediterranean and western Asia, now widely cultivated across India, North Africa, and the Middle East both as a culinary spice and as a traditional herbal botanical.

The seeds have a distinctive warm, slightly bitter, maple-like aroma — in fact, fenugreek is one of the primary flavoring compounds used in artificial maple syrup, and consuming fenugreek in quantity can cause urine and sweat to take on a pleasant maple-like scent, which is completely harmless. How to Use

Culinary: A key ingredient in Indian curry powders, spice blends (panch phoron, berbere), Ethiopian cuisine, and Middle Eastern cooking. Toast whole seeds briefly in a dry pan before grinding to mellow the bitterness and deepen the flavor. Flatbreads & Baking: Add fenugreek powder to flatbreads, naan, and savory crackers for a warm, distinctive flavor. Herbal Tea: Steep 1 teaspoon of whole or lightly crushed fenugreek seeds in 8 oz of hot water for 10 minutes for a warm, earthy herbal tea. A note on aroma: Fenugreek contains sotolone, the same compound responsible for maple syrup’s characteristic scent. Consuming fenugreek in quantity may cause urine and perspiration to take on a maple-like aroma — this is completely harmless and temporary.
