Matricaria chamomilla — German Chamomile, or True Chamomile — is a small, daisy-like annual of the family Asteraceae native to southern and eastern Europe and western Asia, widely naturalized throughout North America and cultivated worldwide. It is one of the oldest and most widely consumed herbal teas in the world, with a documented history of use spanning more than 2,000 years across ancient Egyptian, Greek, Roman, and European botanical traditions. The Romans called the flower chamomile — derived from the Greek khamaimelon, meaning “earth apple” — a reference to the flower’s characteristic sweet, apple-like fragrance. Chamomile tea is made from the dried flower heads of Matricaria chamomilla and is naturally caffeine-free, with a delicate, light, subtly sweet flavor with gentle apple-like notes.
Matricaria chamomilla flowers contain a well-documented phytochemical profile including alpha-bisabolol and its oxides (alpha-bisabolol oxide A and alpha-bisabolol oxide B), chamazulene (the deep blue compound formed during steam distillation of the essential oil — responsible for the characteristic blue color of chamomile essential oil, though not present in the dried flower itself), apigenin (a flavone with a high affinity for GABA receptors — one of the most studied compounds in chamomile), luteolin, quercetin, patuletin, rutin, hyperoside, caffeic acid, chlorogenic acid, ferulic acid, umbelliferone, herniarin, matricine, spiroether, mucilage, pectin, choline, calcium, potassium, magnesium, phosphorus, vitamin C, and beta-carotene. How to Brew
Water Temperature: 200–208°F (just off boiling) — chamomile is delicate and does not require fully boiling water. Leaf Ratio: 1–2 teaspoons (1.5–2g) per 8 oz of water. Steep Time: 5–7 minutes covered — covering the cup while steeping helps retain the volatile aromatic compounds. The flavor is delicate, light, and subtly sweet with gentle apple-like notes. With Honey: A small amount of raw honey is a classic and natural pairing. Iced: Brew double-strength, steep 7 minutes covered, strain, and pour over ice for a refreshing cold infusion.
