Pear muffins

Spicy Pecan Pear Muffins


You will need:
4 lg. pears peeled, cored and diced
1 c. sugar
1/2 c. vegetable oil
2 lg. egg beaten
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp ginger
1 tsp. salt
1 c. raisins or dates
1 c. chopped pecan

Preheat oven to 325 degrees. Prepare 18 muffin cups. Mix pears and sugar in medium bowl. Blend oil, eggs, and vanilla in large bowl. Combine flour, baking soda, cinnamon, nutmeg, ginger, salt in another medium bowl. Stir pear mixture into egg mixture; mix in dry ingredients. Fold in raisins and pecans, do not overmix. Divide batter among cups. Bake 30 minutes at 325 degrees. Serve warm with a cup of Glenbrook's Irish Breakfast tea!
