These shortbread cookies are so good and just a small one is very filling. Come to think of it, a cup of the Earl Grey tea would compliment these cookies! Tea and shortbread cookies, what a treat.

( use sweet salted butter)
1/2 cup of powdered sugar plus 1 tablespoon
2 cups of all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon of vanilla extract

Combine all ingredients; use hands to knead the shortbread dough until ingredients are blended. Press shortbread dough into ungreased pie pan and then flip it out on to an ungreased baking sheet.
